The husband has been fishing like a demon the last few days, enjoying his time off work before he starts his new job. As a result I have a fridge that is now groaning under the weight of Cod, Seabass and Plaice. Now I have never much enjoyed cooking fish but my suspicion is that this was because I had never really had the time to contemplate doing anything other than my ‘stock in trade’ recipes, night after night because of their ease. Now I find myself with the time I have embraced the smelly, slippery things and have been trawling around for recipes, favourite so far is a Cod curry but the Seabass above comes a pretty close second.
Basically this is fennel and red onion baked with Pastis, lemon and oregano with the fillets on top, I served it with finely sliced potatoes baked with tomatoes and rosemary, just such a taste of summer, worth a try at least. The original recipe is from the Billingsgate Market
